When it comes to rejuvenating your holiday spirit, these recipes from Dr Juice, shared founder, Felicia Wallace, are precisely what the doctor ordered.

Dr Juice, in operation for approximately four and a half years, is more than just a juice and smoothie bar. It focuses on nourishing, health-conscious options.

Wallace embarked on this venture after caring for her now-deceased grandmother for several years. The focus on healthy juicing and crafting nourishing smoothies was born out of a personal journey.

“Seeing the healthy lifestyle did wonders for me, and I decided to pass this on to others by opening my own juice/smoothie bar (for me) and encouraging others to live a healthier lifestyle,” Wallace reflects.

Located at 82 Harris Village South Oropouche, invites patrons to experience “healthy living in a cup.”

The establishment specialises in offering an array of health-conscious options, including on-the-spot fruit juices, exotic fruit bowls, cakes crafted entirely from fruits, and edible fruit arrangements.

When asked about the significance of Christmas, Wallace poignantly shares, “Everyone has at least one memorable experience with their grandmother, and I have been fortunate enough to share countless memories with mine.”

Fondly recalling the cherished moments spent with her grandmother, she emphasises the integral role that food played in shaping those memories.

“A big portion of our memories involve food in one way or another. One of the biggest values that my family holds is the importance of family meals.”

Wallace’s vision of Christmas cooking transcends mere recipes; it embodies the warmth of family gatherings and the legacy of her grandmother’s culinary traditions.

“Whenever I went to my grandmother’s house, she never failed to overflow my stomach with her delicious food and dessert.

My idea of Christmas cooking and my favourite memory is just being with family and watching my grandmother as she made some of her classic recipes.”

Felicia Wallace shared these recipes with us:

Mini watermelon cake desserts

Ingredients

1 medium sized seedless watermelon rind removed

One pack of strawberry

One pack blueberry

Raspberries, cherries and blackberries (optional)

One dragon fruit

Mint leaves (optional)

Coconut shavings (optional)

Directions

Slice watermelon into four slices, each about 1½" tall. Cut individual rounds out with a 1½" round cookie cutter.

Take a melon baller and ball out the dragon fruit.

Take the dragon fruit balls and put it in the middle of each melon slice like you’re making a sandwich.

Take toothpicks to stick the melon sandwich into place.

Take the berries and decorate the top of the melon cake using toothpicks to stick it in place.

Use coconut shavings to garnish the top.

Christmas fruit tree

Ingredients

1 pineapple

1 pear

1 pack strawberries

1 pound green grapes, black or red

1 star fruit

3 kiwis (optional)

Fresh berries (optional)

Directions

Cut a thick slice from the bottom of the pineapple and a small one on top. Peel the pineapple.

Try to give the pineapple a regular cone shape.

Slice out the bottom and the top of a pear.

Wash ingredients and pat dry with paper towels.

Start the decoration. You can either poke the pear/pineapple with a lot of toothpicks and then attach the fruit or do the contrary: insert a toothpick in the centre of the fruits and then attach it to the tree structure. It works both ways.
