Dine With The Saints

Patrons, some regulars, others, first timers converged onto the famous “Big Yard” at St Mary’s College on Pembroke Street from very early on Saturday to get their fill of good food as the event, “Dining With The Saints” always delivers.

Hosted by The St Mary’s College Past Students’ Union, some 100 chefs came out to show off their cooking skills at the annual popular food event.

Among the chefs and their interesting names for their dishes were Brent Barry and his “Yeah Viv Talk Nuh – Pork Wickets;” “$10,000,000 Pork” from the president of the Past Students Association, Mark Bishop, Godfrey Araujo’s “Jerktastic Pork,” Andre Baptiste – “Fearless Seafood…are you BRAVE enough??”; John Peter Clarke – “Roast Beef bin Saleem”; Adil Dean – “Causa Rellena con Pollo (Chicken);” David Hackett – “Maharaj Chicken in Eastern Spices;” Henry Kabron – “Brer Rabbit Stew (Cooking);” Ansel Howell – “Royal Poseidon Adventure;” Raymond Smith – “Lamblicous Chops;” Colm Imbert – “Shrimp Anti-Scampi;” “Patrick Kelly – “Royal on the Outback;” Marcus Kriss Marcus – “Stanford Slammer Snapper;” and Suresh Sookoo – “Royal Oink.”

Then from guest chefs, patrons got from SJC’s Theresa Yorke-Metzer, her “Re-Route Pork Fit for a King.” From the Fatima “Posse” of cooks comprising Keith Simpson, Ruthven Thompson, Joel Latiff, Croney and Hayden, they were responsible for “Dougla National Unity Pork,” Veggie Lasagne, Florentine Fish, Lamb – “One day you dey, the next day you ain’t,” Baked stuffed Melongene and “Big Fish in The Cabinet.”

Holy Name Convent’s Waveney Noreiga and Sandra Romany did Barbecue Pork Ribs with sesame seeds and Bell Pepper Beef while Belex’s and QRC’s stalls served a steady flow of patrons.

There were also “Fish and More” from Mariano Browne, “Cha Su Lean Pork” from Terrence Deyalsingh, Pork Stew with Mushrooms from Lawford Dupres.

Christopher Edmond brought Fish in Mushroom; Nicholas Inniss, Pepper Steak; Ainsworth Mohammed; Veggie Lasagne with Soya Mince; Hamesh Mohammed, Silence of the Lambs; Kevin Snaggs, Pork in Tai Red Curry Sauce with coconut relish; Leslie Weekes, Seafood Thermidor; Roger and Brian Weekes, Roast of the Weekes; Gregory Weekes, Royal Caribbean Delight; Ryan Lalsingh, “Batch Dem Down Pork;” Vasant Bharath, Lemmon Chicken; Nelson Brevard, Guava Season Lamb; Emile Wihby, Rogan Gosh Lamb Naan Breads; and Kevin Mohammed, Heavenly Wings.

Apart from the wide array of dishes served up by the chefs, there were desserts from which to choose and a complimentary bar all evening.

Patrons were also treated to entertainment from Frankie Callender and Margarita Fanovich, Xavier Strings, 3canal with their band, Cut and Clear Crew and former Panorama champs, Republic Bank Exodus Steel Orchestra.
